Welcome everyone! So this is our blog. Pretty exciting stuff. Mat and I really wanted to start this blog so everyone could see the progress on our wedding, but also to keep up with our everyday lives. So here goes!
First things first, we don't have a wedding date, but we are thinking June 2008. Why so far away? Well, we both really want to get married in the summer and this summer isn't really an option. Mat is graduating in May and it just seems so soon to pull off the wedding of our dreams. Now we can just really enjoy the planning and not feel like we have to rush around.
We haven't done much so far, just did a site inspection of three different spots: the Crystal Ballroom, the Rose Room and the Penthouse at CW Moore Plaza. We decided for sure that we didn't want the Crystal Ballroom or the Rose Room. We liked the Penthouse for our reception, but we are definitely looking at some more places over the next few weeks. The nice thing is that the Penthouse will put a hold on our "date" and will call us if someone else wants to sign a contract for that date. So at least we can have this place if we don't find anything else. We both like the idea of having part or all of our wedding/reception outside. The Penthouse has an outside and inside, so it gives the option to everyone. I also like that you can do your own decorations if you want. So it's on our list of "maybes".
In other news, we made a delicious dinner last night for anyone looking for something new and different: Chicken-Chile Tostadas. It is easy and fast for those nights when you don't want to cook all night. We have made this recipe once before and it is definitely in our permanent rotation. Last time we made it, we took the leftover meat mixture and combined it with egg beaters and frozen hashbrowns for breakfast burrito fillings. YUM!
